# Roast vegetables with potatoes and quark

Everything on the tray, the oven does the rest. The quark on the side brings the protein the vegetables lack.

- Time: 45 min
- Portions: 2

## Ingredients

- 400 g Potatoes, peeled
- 150 g Red pepper
- 200 g Courgette
- 80 g Onion
- 1 tbsp Olive oil (14 g)
- 250 g Low-fat quark
- 2 tbsp Chives, sliced (6 g)
- Salt, to taste
- Pepper, to taste
- Paprika, to taste

## Method

1. Preheat the oven to 200 °C fan. Cut the potatoes into wedges, the pepper, courgette and onion into rough pieces.
2. Mix everything with the oil, salt and paprika on a tray lined with baking paper.
3. Roast for 35 to 40 minutes, turning once halfway.
4. Stir the quark with chives, salt, pepper and a splash of water until creamy and serve with the vegetables.

Calculated with the values of the German food composition database BLS 4.0. Spoons are level, their weight comes from the USDA database, an egg counts as 50 g without shell. Seasonings to taste are not counted. Per 100 g refers to the weight of the ingredients before cooking.

## Good to know

- The smaller the potato pieces, the faster they cook.
- The vegetables lose water in the oven. Per portion nothing changes, per 100 g the value after roasting is higher.

**Storage:** Vegetables and quark separately in the fridge, 2 to 3 days.
